Sample menu items are below but are not limited to these choices. All menus are custom designed by the chef to meet each individual client's wants, needs, taste, and budget.
Balsamic Braised Chicken
Braised chicken with swiss chard, tomatoes, and balsamic vinegar served with parmesan polenta
Chicken & Black Bean Enchiladas
Chicken strips, black beans, monterrey jack cheese, and red bell peppers in a Mexican salsa rolled in flour tortillas. Topped with cheese and picante sauce
Santa Fe Style Brown Rice
Spicy brown rice mixed with corn, green chile, cilantro, and onion
Turkey Meatloaf
Lowfat turkey meatloaf flavored with onion, garlic, & portabella mushrooms with a red pepper sauce. Served with sautéed broccolini.
Halibut Scampi Style
Halibut topped with diced tomatoes, a light lemon-garlic dressing and parmesan cheese. Finished with butter and baked. Served with pan roasted asparagus.
Garlic Roasted Pork Loin
Roasted Pork Loin seasoned with garlic, thyme, & allspice. Topped with country mustard, shallot and thyme sauce. Served with sauteed green beans & toasted almonds.
Sautéed Pork Chops
Pork Chops seasoned with salt & pepper and topped with a country mustard, shallot & thyme sauce.
Indian Curry with Lamb
Lamb sautéed with garlic, ginger, onions & Indian spices with spinach, cilantro, and zucchini. Served with basmati rice.
French Onion Salisbury Steak
Salisbury steak seasoned with parsley and scallions served over french onion soup with cheese toasts.

Beef cubes in a rich red wine beef sauce with tomatoes, carrots, mushrooms, onions, potatoes and peas. Served with rice.

Seared beef tenderloin medallions topped with a wine and mushroom sauce. Served with roasted garlic mashed potatoes and green beans in a dijon-herb vinaigrette. |
